At Wellness Baking Listowel our philosophy is to bring you the finest quality handmade bakery products, without any additives or preservatives. We just don’t believe in adding anything unnecessary.
Instead we use high quality Coeliac safe, Gluten free ingredients that are sympathetic to your digestion, helping to nurture and protect your body. A gluten free diet should not mean compromising flavour and texture.

How it all began

Cookies for a Friend, How Ildiko started Wellness Baking Listowel

Wellness Baking Listowel was established in April 2011 by Ildiko Bajzat – a Hungarian lady living in Listowel.


Ildiko started baking for other people when she made Cookies for a Coeliac friend. The Cookies were a big hit, something tasty and different...her friends wanted more and Ildiko sensed a gap in the market for gluten free treats with that Home baked taste.

So began Ildiko's determination to setup Wellness Baking.

Developing the Business...

In the early days Ildiko worked from her home kitchen. There is a strong family connection with three generations of family involved – Ildiko’s aunt, cousin and two daughters all play a vital part in the business.


Over time the business has gone from strength to strength and The business is now based at the Listowel Enterprise Centre providing employment to local people.

SuperValu Food Academy

Ildiko has participated in SuperValu’s Food Academy Programme, in conjunction with Bord Bia and the Kerry Local Enterprise Office. The Food Academy works hard to nurture small businesses on their journey from start-up to success.


A key aim of the programme is to support artisan suppliers, and help them to bring their products to SuperValu's shelves. This programme helped to accellerate Wellness Baking's growth at every level of the business and supports sustainable local businesses and their communities.

...but what is Gluten Free?

Gluten is a family of proteins found in grains, including wheat, barley, spelt, and rye. The two main proteins are gliadin and glutenin. Studies show Gliadin is responsible for most of the adverse health effects of gluten.


Many people can tolerate gluten with no detremental effects. However, it causes problems for people with Coeliac disease, gluten sensitivity, wheat allergy, and some other diseases.

Only foods containing 20ppm (20mg/kg) of gluten

or less can be labelled ‘gluten free’. Although even naturally gluten free products may contain small amounts of gluten.

Wheat, Barley, Rye and Spelt all contain Gluten

20ppm is the amount of gluten research proves not

to be toxic to people with Coeliac disease.

Certified Gluten Free Irish Oats

Gluten free Oats are milled in facilities that do not handle wheat, barley or rye to avoid contamination with gluten. Research has shown that most people with Coeliac can safely eat high purity gluten free oats. Only very small numbers of people with coeliac disease are sensitive to gluten-free, uncontaminated oat products.

It’s up to you to decide whether to try gluten-free oats in your diet, but those that do find that they add variety to the gluten free regime. Oats are an excellent source of soluble fibre, which helps to promote a healthy gut in harmony with the natural gut bacteria and can help to treat high cholesterol and maintain lower blood sugars.
